Toffee Sauce

Quarter cup double cream

Eighth cup water

100g golden sugar

50g dark brown sugar

25g salted butter

Makes enough for 2-4 people on a dessert

Water and white sugar high heat til dissolved. Boil (swish around rather than stir) until golden.  Whisk in butter and boil for a minute. Stir in cream and dark brown sugar til melted. Cool.
