Very Rich Chocolate Cake

Gooey and fudgey - small slices recommended!

Even better when warm - microwave a slice for 8-10 seconds

Ingredients
  • Cake
  • 4 Large eggs (or 6 medium)
  • 287g caster sugar
  • 287g unsalted butter (room temp)
  • 253g self raising flour
  • 50g cocoa powder
  • Icing
  • 425ml double cream
  • 300g dark chocolate
  • 3 tablespoons golden sugar
  • Icing sugar (fudge flavoured is lovely) - 250g (approximate)

160deg (fan oven)
Step 3
Beat butter and sugar till very light
Step 4
Add eggs and beat
Step 5
Sieve & add flour & cocoa and mix gently, then whisk up at the end again for 15-20 secs
Step 6
Pour into tin (it’s not as stiff as a normal cake mixture) and cook depending on tin size
Step 7
hemisphere tin = 55mins.
Step 8
Icing
Step 9
Warm cream until almost boiling
Step 10
Remove from heat and mix in chocolate (break into small pieces)
Step 11
Cool
Step 12
When cool, whisk and mix in icing sugar to give icing consistency. Needs to be completely cool so you know the consistency at room temperature
