Gooey and fudgey - small slices recommended!

Ingredients
- Cake
- 4 Large eggs (or 6 medium)
- 287g caster sugar
- 287g unsalted butter (room temp)
- 253g self raising flour
- 50g cocoa powder
- Icing
- 425ml double cream
- 300g dark chocolate
- 3 tablespoons golden sugar
- Icing sugar (fudge flavoured is lovely) - 250g (approximate)

- 160deg (fan oven)
- Step 3
- Beat butter and sugar till very light
- Step 4
- Add eggs and beat
- Step 5
- Sieve & add flour & cocoa and mix gently, then whisk up at the end again for 15-20 secs
- Step 6
- Pour into tin (it’s not as stiff as a normal cake mixture) and cook depending on tin size
- Step 7
- hemisphere tin = 55mins.
- Step 8
- Icing
- Step 9
- Warm cream until almost boiling
- Step 10
- Remove from heat and mix in chocolate (break into small pieces)

- Cool
- Step 12
- When cool, whisk and mix in icing sugar to give icing consistency. Needs to be completely cool so you know the consistency at room temperature
