Gorgeous fluffy gravy delivery devices

Ingredients
- 2 Large Eggs
- Same volume of milk (approx 100ml)
- Same volume of plain flour
- 2 tablespoons duck fat (or similar)
Directions
- Step 1
- Mix eggs, mild and flour in blender. Refrigerate overnight if you can, or at least until cold.
- Step 2
- Heat oven to 220
- Step 3
- Put 1/2 tablespoon fat in each of 4 large yorkshire holes/cups and put in oven until very hot – 1/2 hour works
- Step 4
- Last wiz in the blinder
- Step 5
- Divide mixture between each (quickly so fat doesn’t cool)
- Step 6
- Cook for 25 mins then take out and put upside down in oven so bottom doesn’t get soggy
- Step 7
- Turn off heat, keep door closed and can stay like that until serving (5-10 mins)
Notes
This makes crispy yorkies.
Cook for 20 mins for softer (and can take out of oven after bottom has crisped (5 mins) and leave on side)
Volumes for flour – I measure everything in a jug; just match volumes to the egg (over estimate flour rather than under, it’s less ‘eggy’)
